My kids love that neon-orange Kraft Macaroni & Cheese Dinner, but it’s expensive, hard to find, and loaded with salt and chemicals. Plus, its carbon footprint (by the time it reaches me at the end of the world) makes me feel guilty. A few local pasta companies make similar products that you should stay far away from. Here’s an easy, more natural version you can make with what you probably already have on hand.
Fideos con Queso
Ingredientes
- 2 tbs mantequilla
- 2 tbs harina sin polvos
- 1 c leche
- 100 g ó 1 1/4 c queso blando (mantecoso, chanco etc.) rallado
- 250 g fideos cortos recién cocidos
Instrucciones
- En una olla derretir la mantequilla, a fuego lento. Agregar la harina y revolver constantemente para que no se queme.
- Cuando la mezcla adquiera un color tostado, agregar la leche. Mezclar.
- Cuando la mezcla esté caliente, agregar el queso y seguir mezclando.
- Cuando el queso se haya derretido y la salsa tenga una consistencia uniforme, retirar del fuego y mezclar con los fideos.
So it’s basically a roux with cheese added (and feel free to go heavier on the cheese). For the pasta I like to use one package of Carozzi’s Fusilli Integral. They don’t sell whole wheat pasta absolutely everywhere but it’s pretty easy to find.
