Artisanal chocolate making is the essential element of the factory and its principal activity is simply to realize “art” and give shape through creative and manual means to products slightly different from each other – that is to say – unique….placing in them details that only the expert touch of the artisan can obtain and simply because all his senses are united with his soul.
Always working paying close attention to the smallest detail and quality of the ingredients, the natural starting point as in any other creative process, is avoiding the addition of additives and industrial preservatives that extend the shelf life in an unnatural way. We instead strictly pursue the traditional processes through recipes and the constant search for ingredients from our native land that are produced and consumed essentially by the agricultural community of the area.
The chocolate maker understands perfectly that chocolate is more than a package of flavors and more than a food, as being conceived from the noble cocoa, of mystical qualities and very delicate to work with.
It is imperative to know it, to understand it, to love it, to be able to unite it with other elements, resulting almost in a perfection of matchless characteristics.
An Ithal chocolate differs agilely within their types. From the first view one feels immediately seduced when showed its different tonalities of brown, its forms, its contrasts of colors, its harmony, its simplicity and movement of its presentation. The aromas go directly to the nose and are lodged in the memory receptors, while once in the mouth you can hear the “crack” as you bite into the chocolate, indicating the presence of highly pure chocolate and of excellent quality. Then the chocolate is left to melt in the mouth and the different delicate flavors arise that really are subtle expressions that were designed only by somebody of a refined palate and an acute sensitivity.
